The Minus 8 Collection

Back in 1996, seeking an alternative to balsamic vinegars, a winemaker living on a 100-acre vineyard in Canada's Niagara Wine Region, decided to try his hand at crafting a wine vinegar instead. The resulting outcome was dark like a raisin, had a soft sweetness and glowed with fruit. Pleased with the results, he called it Minus 8 Vinegar and in 2001, he and his partner introduced Minus 8 Vinegar to preeminent chefs at award winning restaurants. It was an immediate hit.

Today Minus 8 produces not only Minus 8 Vinegar, but also three other unique products, each one coveted by professional chefs around the world.
 

	Minus 8 Ice Wine Vinegar is named after the temperature at which the grapes are harvested, and is characterised by mouth-watering acidity, natural sweetness and a roundness and depth from years of aging in French Oak. It's very intense and concentrated, as a result only a small amount of Minus 8 vinegar is ever required.			Dehydr8 Vin de Curé Vinegar is a rich fruit-driven, brilliant golden brown vinegar which was created in 2009 to immediate acclaim from top chefs. Luscious and sweet wine flavours with floral and raisin notes balance mouth watering acidity. Minus 8's innovative air-drying process produces premium Riesling raisins from hand picked grapes at optimum harvest.

The L8 Harvest Vinegar is brimming with fresh fruity aromas and ice wine taste. This unaged vinegar enhances other flavours in a dish,can bring flavor where needed, or can be sipped as a digestif after dinner.

8 Brix Red Verjus and 8 Brix White Verjus are a twist on traditional verjus, bringing a burst of flavour with the sweet full flavours of grapes from the ice wine. 8 Brix Verjus is a wine-friendly alternative to vinegars. Use 8 Brix in place of acidic ingredients such as vinegar, lemon juice or wine.
